The domaine has been working organically since the 2000 vintage and since 2010 it has been certified organic wine. In this same philosophy, for some years, a part of the vineyard has been working in an agricultural biodynamic way, with the aim of oscillating on the whole vineyard. The soils are worked with respect for nature, by regular plowing without herbicide and without chemical products, using only sulfur and copper phytosanitary treatments in smaller quantities.
This vintage has benefited from the optimal climatic conditions and promises to be an exceptional vintage with significant aging potential. The wines are generous, with a very nice structure, with beautiful colors and excellent maturation. The vintage was characterized by mild winter and spring, compared to normal rains, followed by very hot weather with summer temperatures several times above 37 ° C. The rains in mid-July and mid-August allowed the vines to avoid water stress too prolonged and allowed a good ripening of the grapes. The excellent climatic conditions made it possible to harvest a healthy crop. White wines have aromas of white and yellow flowers (acacia and linden), generous in the mouth, fruity, refreshing and with a nice tension.
Clos du Caillou Blanc 2015 with a pale gold color and bright reflections, on the nose we find the aromas of white flowers, hawthorn, peach, wild fennel and anise. On the palate it is fresh, with beautiful mineral notes of citrus, mandarin and cedar.
Wine capable of evolving a few years.
Taste it at a temperature of 12 °, accompanying oysters or spaghetti with clams.
