The vineyards are located on marly and limestone soils. This combination is ideal for the development of the vine, in fact the marls allow you to maintain a constant water supply and the limestone allows you to maintain a good level of acidity and gives structure to the wine.
CLIMAte
The 2007 vintage is very special and absolutely out of the ordinary. The shoot of the vines was very early, after an exceptionally hot spring. The twigs developed very quickly and flowering took place around May 25th. This date is quite exceptional in terms of historical data on the Alsatian vineyard and once again illustrates the reality of global warming. On the other hand, the months of June, July and August have been the coldest and rainiest in the past 50 years! The vine has gradually lost its advantage and the vegetative cycle has been extended in a completely new way. The harvest began on September 4, 2007 carried out in a beautiful summer with temperatures that quickly exceeded 22 ° C and ended on October 5. The very favorable weather conditions in September and October made it possible to collect each plot at the most favorable moment. The freshness of summer and in particular the low night temperatures were ultimately very favorable to the preservation of the acidity in the grape berries. The wines of the 2007 vintage therefore present splendid structures. The long vegetative cycle allowed the development of complex and deep aromas. Finally, thanks to the beautiful autumn, the ripening was able to end in excellent conditions. 2007 is undoubtedly a beautiful year for those who have managed to manage completely new weather conditions.
tasting notes
Beautiful golden yellow color. The aroma is intense, of great purity, with notes of honey, dried apricot, quinces and lavender. On the palate, wide and rich wine, but not heavy, thanks to the presence of good acidity and the great strength of this wine is given by its power and balance brought about by organic agriculture.
