The collection of grapes of the All White 2013 Terres des Amoureuses of Chateau Les Amoureuses is performed mechanically, after careful monitoring through sampling and analysis on each plot; transport takes place in small trailers with liquid separation, cooled and protected from oxidation thanks to dry ice. Followed by cold skin maceration and alcoholic fermentation with indigenous yeasts. Malolactic fermentation is not carried out to preserve natural acidity. The wine matures partly in steel and partly in barriques for 12 months, followed by assembly.
