Produced from Chardonnay grapes in the Premier Cru Les Chaumees vineyard in Chassagne Montrachet. In the cellar the wines of the Domaine Philippe Colin are vinified in the traditional way, by carrying out alcoholic and malolactic fermentation in Burgundian pieces, the wooden elevation lasts 15 months. In the cellar Philippe also uses large wood (500lt) in addition to the 227lt Pieces. The use of new wood is around 20/25% as always.
The approach in the vineyard follows the line of Lutte raisonee and at the moment he has no intention of making the next step towards biodynamics, although Philippe's idea is that of respecting what nature offers. According to the producer, this parcel offers more mineral wines than the other premier wines, although they are still powerful.
Intense straw yellow to the eye, with important golden tendencies. The nose is articulated, pushed on ripe yellow fruit, then also concentrated on the mineral, and lastly characterized by references to ginger, lemongrass and oak. Clean and fresh the sip, but at the same time also consistent and creamy. Good length.
Wine with good aging potential.
Taste it at a temperature of 12-14 ° C combined with seafood risotto.
