It comes from Chardonnay grapes grown and grown in Rully in the vineyards classified 1er Cru Monpalais. In the vineyard Jean Baptiste Ponsot is little interventionist, indigenous yeasts are used for spontaneous fermentation lasting 15-20 days. The wine is aged in small barrels for 15 months; a further rest in glass follows without undergoing clarification or filtration. On the nose there are white flowers, vanilla and a pinch of lemon, the attack is frank and direct. On tasting we can taste the lemon and vanilla that blend well and are accompanied by the beautiful acidity typical of white Burgundy wines. It is very lively with good tension. The finish is made with a characteristic mineral touch of Rully.
