The Bourgogne Blanc of the Domaine Fanny Sabre comes from Chardonnay grapes grown on clayey and calcareous soils. The approach in the vineyard is respectful and agriculture without chemicals in the vineyard is the approach with which the certified organic domaine works. The wines are then aged for at least a year in one of the rooms that was once a warehouse that contained gunpowder. The wines are then placed in stainless steel vats for 3-4 months before being coarsely filtered and bottled by hand using a gravity bottle filler and manual cork.
In the glass it has a straw yellow color, the nose is quite intense, we find exotic fruit and slight hints of aromatic herbs, there are timid citrus notes. In the mouth it is soft, fresh and savory at the right point, quite warm, mineral in the finish, I would say of excellent balance.
