The expressive force that a white wine coming from calcareous soils at the foot of the Mendola can have is immediately perceived in this cuveè made up of three varieties: Chardonnay (mostly), Petit Manseng and Manzoni Bianco.
The vinification of the grapes takes place separately and in particular:
Chardonnay: fermentation and malolactic carried out in barriques and tonneaux (500 l);
Manzoni and Petit Manseng cross: fermentation in steel.
The wine then matures on fine lees for 8 months; Stabilization with winter cold and light filtration before bottling.
It is a wine that resembles a classic Burgundy White: it has notes of walnut and vanilla, full body and lively acidity. The long aging on the lees further intensifies its strength, sensation on the palate and development potential.
Wine to drink but does not mind a couple of years of bottle aging.
Taste it at a temperature of 10 ° C - 12 ° C. Perfect with important and tasty fish dishes, even with elaborate cooking. Excellent with delicate white meats.
