It comes from Chardonnay grapes grown on parcels owned by the Domaine Bzikot, 0.25 Ha only for this Premier Cru vineyard Les Folatières, centrally located on the East side of le montrachet Grand Cru. The soil are deeper and richer in clay so the wines are fatter than elsewhere in the village. Vines benefit from these dry soil, as a lack of water helps to curb vigor and forces vines to use more mineral-laden hydration deeper in the soil. The dry, chalky soils also warmth, reflecting it back onto the vines to help ripening along. 45 years old vines.
Hand harvested and hand sorted twice in the vineyard and at the entrance of the winery. Very slow and gentle pneumatic press to respect the fruit. The wine goes then directly into barrels after being decanted to reduce the sediment. Elevage is around 15 months in oak barrels with 25% new oak before six months in stainless stell vats to keep its freshness.
