0.15 Ha only for this Premier Cru vineyard Les Perrières, located south east of the Village of Puligny. In Les Perrières, the vines sit on a marly, chalky soil that has a large proportion of pebbles and stones. Water drains freely here, making the topsoil rather dry and able to absorb heat during the sunny days. This reflect onto the vines during cooler periods, which helps the development of flavor and sugars in the grapes. The world "terroir" carrier lots of importance here. 45 years old vines
Hand harvested and hand sorted twice in the vineyard and at the entrance of the winery. Very slow and gentle pneumatic press to respect the fruit. The wine goes then directly into barrels after being decanted to reduce the sediment. Elevage is around 15 months in oak barrels with 25% new oak before six months in stainless stell vats to keep its freshness.
Brilliant gold color with a pale green rim. Aromas of white flowers lime-tree, linden, lemon curd and almond paste followed by dried fruits, honey, hints of spices and loads of minerals. Very seductive with a wonderful silky texture.
Wine with excellent evolutionary prospects.
Taste it at a temperature of 12 ° C pairing it with tuna, lobster, crab, white meat, mushrooms. Foie Gras and noble fish like turbot or monkfish
