Produced from Chardonnay. In the cellar the wines of the Domaine Simon Colin are vinified in the traditional way, through the performance of alcoholic and malolactic fermentation in a Burgundian piece, the wooden elevating lasts 15 months. In the cellar Philippe also uses large wood (500lt) in addition to the 227-liter Pieces. The use of new wood is always around 20/25%.
The approach in the vineyard follows the line of the Lutte raisonee and at the moment still has no intention of making the next step towards biodynamics, although Philippe's idea is one of respect for what nature offers. According to the producer, this fee offers more mineral wines than the other premier wines, although still powerful.
After a particularly short winter, the months of February and March are almost spring, dry, with even a record of heat for the season on February 27, favoring the awakening and early development of the vines. On April 5th there is a first morning frost followed by four others until May 7th. Winegrowers run for cover by lighting fires to protect the vines. The summer of 2019 is one of the hottest known with two heat waves: one in late June and the other in late July. In some places it will exceed 40 ° C. Fortunately, the month of August brings rains that allow nature to regenerate. The climate is cool at the beginning of September to warm up as the harvest approaches, which begins in the middle of the month.
At sight, bright golden yellow. The nose is expressed with a beautiful floral bouquet and with citrus, aromatic and vanilla notes. On the palate, it develops with great structure and body: warm and fresh, also highlighted by great minerality. Fine and harmonious, grand finish of white flowers and lemon.
Wine with good aging potential.
Taste it at a temperature of 12-14 ° C combined with risotto with seafood.
