wine description
It comes from Chardonnay grapes grown and grown in vineyards classified with the appellation Bourgogne Marsannay AOC. Wine produced from 80-year-old vines on a soil composed of red stony clay and sandy soil on clayey limestone. It has a beautiful golden yellow color, the nose reveals hints of citrus fruits, honey and white flowers (hawthorn, acacia) and some exotic touches. In the mouth it brings great volume, beautiful circularity, beautiful mineral notes and a splendid sapidity.
Climate
After a particularly short winter, the months of February and March are almost spring, dry, with even a record of heat for the season on February 27, favoring the awakening and early development of the vines. On April 5th there is a first morning frost followed by four others until May 7th. Winegrowers run for cover by lighting fires to protect the vines. The summer of 2019 is one of the hottest known with two heat waves: one in late June and the other in late July. In some places it will exceed 40 ° C. Fortunately, the month of August brings rains that allow nature to regenerate. The climate is cool at the beginning of September to warm up as the harvest approaches, which begins in the middle of the month.
Tasting Notes
Straw yellow. The nose is expressed with hints of nectarine and apples, resinous notes and chalky tones. On the palate it is fresh, savory and with excellent balance.
Cultivation of vines
The vines are grown organically and a simple guyot pruning is used. All the work in the vineyard is done by hand. The vines are planted at a density of 10,000 plants per hectare.
vinification and aging
Once harvested, all the grapes are destemmed, undergo a cold maceration and ferment with natural yeasts. Yann prefers a long and slow lifting on the fine lees. The grapes are pressed in the tank and decanted in barriques where they rest for 16 months. Aged in 228 liter two year old barriques for 16 months. Bottled unfiltered.
