It comes from Aligotè grapes grown and grown in vineyards classified with the appellation Bourgogne Aligotè AOC. Wine produced from 80-year-old vines on a soil composed of red stony clay and sandy soil on clayey limestone.
Straw yellow with golden reflections; on the nose there are aromas of acacia flowers and fruity notes. On the palate it is fresh, soft, balanced, with a delicately almond finish.
Cultivation of vines
The vines are grown organically and a simple guyot pruning is used. All the work in the vineyard is done by hand. The vines are planted at a density of 10,000 plants per hectare.
Vinification and aging
Once harvested, all the grapes are destemmed, undergo a cold maceration and ferment with natural yeasts. Yann prefers a long and slow lifting on the fine lees. The grapes are pressed in the tank and decanted in barriques where they rest for 16 months. Aged in 228 liter two year old barriques for 16 months. Bottled unfiltered.
