The term "foulot" refers to the clumps and mists that occur in humid places. "Les Folatières" designates the name of the old French "foletière", "place haunted by fools", legendary beings, elves of a light and lively grace, which the popular imagination saw dancing above the waters. stagnant areas of this plot in wet weather.

Wine Description

Les Levrons are located in the north of the Puligny-Montrachet appellation, in the immediate vicinity of the village, at the foot of the hill. This locality is the diminutive of "hare" which at the time must have been abundant in this area.

Vine and Terroir

The chardonnay vineyards planted in the seventies, of 0.35 ha, grow on calcareous and marly soils and benefit from the ideal south-east exposure. The quality of this terroir, half calcareous half clay, suggests, due to the balance it brings to the wine, that it is one of the best 1er crus of Puligny-Montrachet.

Climate

First vintage of the domaine certified in organic farming. 2018 was productive, balanced and of high quality. It is a warm year, which was regularly watered and which offered magnificent ripe and perfectly formed clusters. The whites of the 2018 vintage are of great finesse. In the mouth they are fleshy, greedy and have aromas of yellow fruits. The 2018 vintage reveals elegant, fine and fresh red wines.

Vinification and Aging

After a manual harvest, the grapes are pressed in whole bunches. White musts are not added with sulfur dioxide before fermentation. Subsequently, after a light decantation, they are placed in oak barrels in which fermentation and maturation follow one another. Fermentations are carried out by indigenous yeasts. After 12 months of refinement, they are racked and then transferred to vats for the end of refinement (another 6 months). They are bottled without any filtration.

Tasting notes

The nose is richer than that of the 1er Cru "La Garenne", the aromas of white flowers (elderberry, jasmine and almond blossom) mix with the stone and together form a very fragrant, demonstrative nose that immediately amazes the senses. Energetic, tense, the wine reveals a telluric character in the mouth: a vibration that flows, sinks and persists indefinitely in a fresh, almost mentholated finish. The immense terroir gives an extraordinary wine, more complete and brilliant, and whose true strength is a delicacy.

Aging capacity

Wine with good aging potential.

Small Tips

Taste it at a temperature of 12-14 ° C combined with risotto with scampi or other fish risotto.
