Born from Chardonnay grapes, the 3 parcels that make up this Chablis Vieilles Vignes are all in Lignorelles. The vines are cut into double guyot. The yield is naturally low, offering wines of great aromatic richness. The aging lasted 11 months: 60% stainless steel to preserve the aroma intensity and 40% 3/4 pass barrel. The assembly allows to find the balance between the natural richness and the minerality of the wine.
Wine description
It comes from Chardonnay grapes, the vines are between 25 and 30 years old, cut into double guyot. 13 Ha of Chablis in the municipalities of Lignorelles, Beine and Ligny le Chatel. The thermoregulation allows to carry out low temperature fermentations in order to develop all the aromas. For this harvest the breeding was made with 80% stainless steel to preserve the freshness and minerality of the wine and 20% in old barrels (from 4 to 15 years) to bring structure and balance to the wine.
Climate
After a particularly short winter, the months of February and March are almost spring, dry, with even a record of heat for the season on February 27, favoring the awakening and early development of the vines. On April 5th there is a first morning frost followed by four others until May 7th. Winegrowers run for cover by lighting fires to protect the vines. The summer of 2019 is one of the hottest known with two heat waves: one in late June and the other in late July. In some places it will exceed 40 ° C. Fortunately, the month of August brings rains that allow nature to regenerate. The climate is cool at the beginning of September to warm up as the harvest approaches, which begins in the middle of the month.
Tasting notes
Straw yellow color. The bouquet is complex and intense, with floral and fruity aromas, hints of flint and spices. On the palate it has good structure, rich and deep aromas, combined with freshness and final persistence. Closes on decidedly mineral notes.
