Produced from Chardonnay grapes in the vineyard classified as Premier Cru Les Chaumees in Chassagne Montrachet. In the cellar the wines of the Domaine Simon Colin are vinified in the traditional way, through the performance of alcoholic and malolactic fermentation in a Burgundian piece, the wooden elevating lasts 15 months. In the cellar Philippe also uses large wood (500lt) in addition to the 227-liter Pieces. The use of new wood is always around 20/25%.
The approach in the vineyard follows the line of the Lutte raisonee and at the moment still has no intention of making the next step towards biodynamics, although Philippe's idea is one of respect for what nature offers. According to the producer, this fee offers more mineral wines than the other premier wines, although still powerful.
At sight, the wine is straw yellow. The nose expresses fruity and floral notes, with light citrus and hints of aromatic herbs. On the palate, a great mineral voice and a wonderful freshness counterbalance a vigorous body. Balanced and fine.
